INGREDIENTS PORTIONS STEPS
Romaine Lettuce 1 head Cut, wash and spin lettuce.
Cherry Tomato, halved 8 pc Combine Romaine Lettuce and all these ingredients. Add enough dressing. Toss and plate.
Sprouted Grain Bread Croutons Enough
Lemon and Garlic Dressing Enough
Salt and Black pepper To taste
Fresh Lemon Juice To taste Squeeze fresh lemon juice on salad.
Parmesan Cheese To taste Shave Parmesan Cheese on top of salad

Lemon Garlic Dressing
INGREDIENTS PORTIONS STEPS
Lemon Juice 20 g Combine these ingredients in a bowl. Whisk until smooth.
Lemon, zested ½ lemon
White Wine Vinegar 20 g
Honey 40 g
Mayonnaise 40 g
Dijon Mustard, smooth 7 g
Garlic paste 12 g
Garlic confit, mashed 12 g
Salt 4 g
Black Peppercorn, grounded Pinch g
Garlic oil / Avocado oil 140 g Whisk in oil slowly until emulsified & thickened.

Garlic confit (油浸蒜頭)
INGREDIENTS PORTIONS STEPS
Garlic Cloves 120 g In medium heat, cook garlic in avocado oil. When the oil boils, lower to simmer. Stir frequently. Simmer until the garlic is soft and light golden. Strain the oil. Keep the garlic oil and garlic confit in the cooler.

Sprouted Grain Bread Croutons
INGREDIENTS PORTIONS STEPS
Sprouted Grain Bread 4 pc Cut bread to cubes, put in a bowl
Garlic Oil 40 g Add oil, Salt, and pepper to the bread. Toss. Bake at 325F 15 minutes. Rotate the tray. Bake 5 more minutes.

Black Peppercorn, grounded Pinch
